Original recipe (1X) yields 2 servings

  • 6 ounces dried broad noodles or egg noodles

  • 2 eggs

  • 2 tablespoons heavy cream

  • 1 tablespoon water

  • 2 tablespoons butter

  • 4 ounces canned ham, such as SPAM®, or Black Forest Ham, cut into small dice

  • 1/2 white onion, finely diced

  • freshly ground black pepper to taste

  • 1 tablespoon chopped fresh parsley, or to taste

Directions

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in noodles and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, 7 to 9 minutes. Reserve about an 1/8 cup of the pasta water and set aside.


  • Add eggs, cream, and water to bowl; whisk to combine. Season with black pepper.


  • Heat butter in a large skillet over medium heat. Add Spam or ham and cook until lightly browned, about 3 minutes. Add onion and cook until onion is translucent, about 5 minutes more.


  • Stir cooked noodles into skillet. Pour egg mixture in and stir until eggs are set. Remove to a plate, sprinkle with parsley and enjoy!
