Original recipe (1X) yields 5 servings

  • 1 bunch asparagus, ends trimmed

  • 1 pound carrots, peeled, trimmed and quartered

  • 2 teaspoons olive oil

  • 1/2 teaspoon Greek seasoning, such as Mt. Olympus from Savory Spice Shop®

  • 1 pinch salt and freshly ground black pepper

Directions

  • Preheat the oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with parchment.


  • Place asparagus and carrots on the prepared baking sheet. Drizzle with olive oil; sprinkle with  Greek seasoning, salt, and pepper.


  • Roast for 30 minutes, tossing mixture halfway through the process. Serve immediately.
