This is one of my favorite french toast dishes along with french toast casserole and pumpkin churro french toast sticks. It’s time to try a new kind of french toast!

What’s better than breakfast or lunch? Brunch of course! I love to host brunch because it’s a fun departure from the usual meals of the day. I often do a brunch for for special occasions like Mother’s Day, New Year’s Day or even festive Saturdays.

One of the great things about planning a brunch menu is that you can include both sweet and savory fare. This cream cheese stuffed french toast is most definitely on the sweet side and it is an easy, yet decadent addition to the meal. I like to pair this french toast with savory breakfast recipes like ham and egg cups, hash brown egg casserole and sausage casserole.

Stuffed French Toast Ingredients

To make this stuffed french toast recipe you will need large eggs, milk, sugar, vanilla, brioche bread and butter. For the filling you will need cream cheese, powdered sugar, fresh raspberries and chopped almonds. How Do You Make Stuffed French Toast?

To make this recipe, start with making french toast. In a large bowl whisk together eggs milk, sugar and vanilla extract. Heat your griddle or skillet and melt butter on the griddle. Dip your bread in the egg mixture and place it on the griddle. Cook it on both sides until done. As you cook the french toast, make the filling by placing softened cream cheese in a bowl and beating it until fluffy. Mix in powdered sugar and beat until combined. Assemble your stuffed french toast by laying a piece of toast on a plate and topping it with filling, raspberries and almonds. Next add another piece of toast on top of the filling. Garnish with maple syrup, more filling, almonds, raspberries and a mint sprig and enjoy!

Tips For The Perfect Stuffed French Toast

  • I used brioche bread but challah or any other egg bread would also be great. You could also use a fluffy French bread or Texas toast.
  • Feel free to purchase pre-chopped almonds or chop your own almonds.
  • I cut slices of french toast diagonally across the middle because I think it makes for a much prettier presentation.
  • You can either spread the sweet cream cheese filling between the slices of french toast with a knife or load the filling into a pastry bag to pipe it on. Either way will be equally delicious!

Quick Tip

You can use any chopped almonds; however, I often used honey roasted chopped almonds for a little extra flavor.
