Original recipe (1X) yields 4 servings

  • 1 cup old-fashioned rolled oats

  • 1 overripe banana

  • 2 large eggs

  • 1/2 cup unsweetened almond milk or milk of choice

  • 2 tablespoons honey or sweetener of choice

  • 1 teaspoon baking powder

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon ground cinnamon

  • 1/8 teaspoon salt

  • 1/3 cup chopped fresh strawberries

  • 1/4 cup chocolate chips (optional)

Directions

  • Preheat the oven to 350 degrees F (180 degrees C).


  • Combine oats, banana, eggs, almond milk, honey, baking powder, vanilla, cinnamon, and salt in a high speed blender and blend until smooth. Remove the blade and fold in chopped strawberries.


  • Divide batter evenly between 4 ramekins and sprinkle chocolate chips on top.


  • Bake in the preheated oven until baked oats are puffed and light golden brown, about 25 minutes.


  • Let cool for at least 5 minutes and serve warm or at room temperature.

    Cook’s Note

    You can swap out the strawberries for blueberries, raspberries, blackberries or a mix of whatever you like.
