When I want a protein packed breakfast, I often turn to ham and egg cups, a sausage casserole or these breakfast burritos. They’re the perfect hand held meal for kids and adults alike!

I’m always looking for easy breakfast recipes that my whole family will happily eat, and I’ve found that breakfast burritos are always a big hit! I love that you can easily customize breakfast burritos to everyone’s tastes, and you can have them on the table in 15 minutes. I make a big batch of these burritos at the beginning of the week for my kids to grab and reheat each day.

When you make these breakfast burritos you will need butter, fully cooked breakfast sausage links, large eggs, cheddar cheese, refried beans, pico de gallo salsa, flour tortillas, salt and black pepper. See the recipe card below for amounts and details.

How Do You Make A Breakfast Burrito?

To make these burritos, first heat butter in a large pan or large skillet. Add eggs to the pan and scramble the eggs with salt and pepper. You want your eggs to be partially cooked. Move them to one side of the pan. Next, place diced breakfast sausage next to the eggs and heat the sausage through while the scrambled eggs finish cooking. Heat refried beans and lay warm tortillas out on a flat surface. Layer your ingredients over the center of the tortillas starting with beans, then eggs, sausage, cheese and salsa. Roll it all up and you’re ready to eat!

Tips For The Perfect Breakfast Burrito

  • As you cook your eggs, cut the eggs into small chunks that you can later place on your tortillas.
  • Layer your ingredients in the middle of your tortillas in a long oval shape. Make sure to leave some room on the ends to fold your tortillas.
  • You can use store bought or homemade pico de gallo. I typically use store bought to save time for this recipe.
  • This breakfast burrito recipe uses fully cooked breakfast sausage to make for a speedy prep time.
  • I typically make 6 burritos at once, then store any leftovers in an airtight container in the fridge for use later in the week. You can reheat each breakfast burrito in the microwave for about a minute or until warmed through. The burritos will last in the refrigerator for up to 3 days.
  • You can also freeze your burritos for up to one month. You can reheat frozen burritos by cooking them in the microwave for 3-5 minutes.

Quick Tip

Warm your refried beans before you use them. You can warm them in a microwave safe container in your microwave on high for 1 minute.

How To Fold A Burrito

Layer your fillings down the middle of your tortilla, leaving about 1/2 inch of space on either end. Fold one half of the burrito over the filling, then tuck in both sides as you roll.

While I think this recipe is delicious as written, you can add other ingredients into the mix.

  • Guacamole: Add 1 tablespoon of pre-prepared guacamole to each burrito.
  • Olives: Add 2 teaspoons sliced black olives to each burrito.
  • Lettuce: Add 2 tablespoons of shredded romaine or iceberg lettuce to each burrito.
  • Beans: You could substitute refried beans with pinto beans or black beans.
  • Meat: Feel free to substitute the sausage with cooked ground beef, cooked ground turkey or cooked chorizo. You also could add cooked bacon to your burritos!
  • Seasoning: Feel free to enjoy extra flavor by cooking your eggs with seasoning blends like fajita seasoning or taco seasoning.
  • Cheese: Free free to add your favorite shredded cheeses like Monterey Jack cheese, pepper jack cheese or add some crumbled cotija cheese.
