According to the box, with just 10 minutes of prep, and 35 minutes of cooking time, this roasted potato dish can be ready for serving to a crowd in under one hour. Serve them alongside comforting recipes like whole roasted chicken or creamy herbed pork chops.

- 4 medium all-purpose potatoes, cut into large chunks (about 2 pounds)

Once I discovered this not-so-secret recipe, I had tons of questions. Luckily, my friend was kind enough to provide me with a few pro-tips for making the potatoes even more delicious. She loves it as-is, but over the years, she’s incorporated some methods of her own, and says the potatoes are “an even bigger hit” with the help of the following tips:
- Yukon Gold potatoes are best: Widely considered the best potato for roasting, it came as no surprise when my friend advised using Yukon Golds for this recipe. The thin skin and starchy texture of this potato roasts into a creamy, tender, buttery interior, with a crispy, golden exterior crust.
- Dice the potatoes: Rather than cutting the potatoes into large chunks, dicing them into smaller pieces (about 1-inch cubes) makes them easier to eat. It also helps each of those bites to become more flavorful, as the flavor of the soup mix is absorbed by each piece.
- Soak the potatoes before roasting: Soaking potatoes in cold water for at least 30 minutes, or as long as overnight, will draw out excess starch, resulting in a crispier exterior after roasting. Be sure to drain, thoroughly rinse, and pat the soaked potatoes dry with a kitchen towel before placing them in the oven.
- Additional herbs: If you love the deep and earthy flavor of herbs with roasted potatoes, a teaspoon each of chopped fresh rosemary, thyme, and oregano complements the flavors of this packaged soup mix beautifully, and gives it an even more comforting homemade touch.
