Original recipe (1X) yields 10 to 12 servings

  • 6 ears fresh corn, shucked

  • 1/3 cup mayonnaise

  • 6 ounces feta cheese

  • 1 medium English cucumber, seeded and diced

  • 1 tablespoon red wine vinegar

  • 1/4 cup chopped parsley, plus more for garnish

  • 1 lemon, juiced

  • 1/4 teaspoon smoked paprika, plus more for garnish

  • 1/2 teaspoon salt

  • 1/4 teaspoon freshly ground black pepper

Directions

  • Heat a grill or grill pan to high heat. Add corn, and cook, turning occasionally, until partially charred. Let cool.


  • Cut kernels from corn cob and add them to a large bowl. 


  • Reserve 2 tablespoons feta for topping and add remaining feta to corn. Stir in cucumber, parsley, mayonnaise, red wine vinegar, lemon juice, smoked paprika, salt, and pepper until just combined.


  • Transfer to a serving bowl and top with reserved feta. Sprinkle with parsley and smoked paprika as desired.
