1/3 cup mayonnaise

6 ounces feta cheese

1 medium English cucumber, seeded and diced

1 tablespoon red wine vinegar

1/4 cup chopped parsley, plus more for garnish

1 lemon, juiced

1/4 teaspoon smoked paprika, plus more for garnish

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper
Directions
Heat a grill or grill pan to high heat. Add corn, and cook, turning occasionally, until partially charred. Let cool.
Cut kernels from corn cob and add them to a large bowl.
Reserve 2 tablespoons feta for topping and add remaining feta to corn. Stir in cucumber, parsley, mayonnaise, red wine vinegar, lemon juice, smoked paprika, salt, and pepper until just combined.
Transfer to a serving bowl and top with reserved feta. Sprinkle with parsley and smoked paprika as desired.
