Chef Emeril Lagasse is probably most known for his French-inspired Cajun and Creole fusion cuisine. However, if you’ve ever watched Lagasse’s cooking shows, scrolled his TikTok videos, or eaten at one of his 10 restaurants, then you know he’s about much more than just gumbo and seafood.
Lagasse’s TikTok introduced me to one of my all-time favorite recipes, his spicy sausage rigatoni, and a recent trip to New Orleans had me falling in love with a Southern classic of his, fire crackers. On that same visit to Emeril’s Brasserie at the newly renovated Caesars New Orleans hotel, I discovered a new Lagasse recipe that I can only assume comes from his European training days.
Lagasse trained in both Paris, perfecting his French cuisine, and at a bakery in Portugal, learning all about pastries and bread. So, it’s no surprise that one of the most popular items on Lagasse’s menu is his take on a French-German bakery favorite: tarte flambée.
What Is Tarte Flambée?
Tarte flambée is a tart topped with cheese, bacon, and onions. It resembles a white pizza—and can be made with pizza dough—but it’s more of a savory tart than actual pizza.
Bakers in France and Germany popularized the dish, which is traditionally made from dough scraps shaped into flatbread.
Lagasse’s tarte flambée at Emeril’s Brasserie features a flaky, crispy crust topped with a creamy cheese spread, savory caramelized onions, bacon, and nutty gruyere cheese. It’s one of the most-known dishes at the restaurant—and one the Caesars Entertainment team insisted we try while in New Orleans. And I’m so glad they did.

The savory pizza-like tart wasn’t just one of the best things I ate on the trip, it was one of the best things I’ve ever eaten. Lagasse’s tarte flambée isn’t like the onion tart I’m used to—like the one Stanley Tucci and Ina Garten enjoy—because the caramelized onions aren’t the star of the show. The buttery onions are co-starring alongside crispy bacon and lots of cheese.
Lagasse’s tart isn’t for the non-cheese fans—and certainly not for the lactose intolerant—as it’s loaded with a mixture of Boursin and cream cheese and melty gruyère. Every bite is packed with magical, melded flavor—so much so that I almost said to heck with my whole meal, I’ll eat the entire tart instead.

How to Make Emeril Lagasse's Tarte Flambée
Ingredients:
- 1 cup Boursin cheese spread
- 1 cup cream cheese, softened
- 1 cup shredded gruyere cheese
- 1 cup cooked chopped smoked bacon
- 1/3 cup caramelized onions
- 1 12-inch round pizza dough or puff pastry, prebaked
